How can I learn to eat healthier?

Call it a New Year's resolution but I've realized I eat way too much junk food. I was never taught how to cook properly, so everything I can/do make comes from a box or can.

I've tried Rachael Ray's Recipes and I can follow a couple of them but often times I either can't find the ingredient the recipe calls for OR I mess something up along the way... (example: not cooking the rice before adding it to the recipe)

I really would like to learn to easy, quick, recipes that fill me up.

I'm a freshmen in college and I don't want to end up with the freshmen fifteen.
 
The best magazine I've found is Cooking Light for recipes and ideas, otherwise just stick with vegetables, fruit and low fat meats, cheese and fish... easy on the carbs.

A simple thing to remember for healthy eating. Food is perishible. If something has a long shelf life, it is probably crap.

I like to make a lot of mexican food, as it is relitively simple, and always good. Try this dip for instance :

2 avacados, about half a bunch of cilantro, half a sweet onion, juice a lime, some salt, and some franks red hot sauce
