How does audio get sent across Bluetooth and then reconstructed into an audio signal?

What protocol is used to package the audio data? Is it RS-232? If you have extensive knowledge about streaming audio across Bluetooth, I could use a contact for question about a project I am working on.

I plan on converting the digital audio signal that my SparkFun Bluetooth chip receives and turning it back to an analog audio signal through a CPLD or some kind of programmable chip.

Also, if the data is sent in packets with overhead - I am assuming that it will create a delay between each audio packet. Thus, will require a buffering. Any insight to dealing with that? Will need something with memory...
