How is the Music Quality on Youtube? Can it be converted to MP3 with quality sound?

I have downloaded FLV files and used a program to rip the audio to an MP3 format. The sound quality on the video when I listen to it sounds good. When converted it sounds flat. How is the quality of sound on Youtube compared to a CD and is there a good program to strip the audio into a quality MP3 format for a music player?
Do you download an FLV file or is it better to download as an MP4. Can anyone recommend good programs for the download and a good converter program to MP3 format. I used AoA Audio Extractor but the music quality sounded tinny.
