I ride as a passenger on my boyfriends bike (Yamaha FZ6R) for almost a year, I am an okay multitasker. I have never driving a stick or a motorcycle before. Will it be easy for me to get the concept of a clutch down. I know exactly when my bf is about to shift on his bike and how to watch my surroundings. I understand I will probably lay the bike down. But I also understand that the day after I get it I'm not going to be topping out on the highway.
I plan on taking a course before I get the bike and the insurance.

It is one of the easier beginner bikes. Not too overpowered. I would suggest taking a Motorcycle safety course first though. It'll be much better than just getting your boyfriend to teach you. It'll also greatly lower your insurance rates.

cbr250 or the Kawi Ninja 250 are great learner bikes - small, light and a little "peppy". Riders courses are great and highly recommended. Not sure there you are but ABATE of Indiana does a great course. I am sure you dealer will know of one.
