It happens all the time. You don't need to be apologetic about it. Celebs just make fun of themselves whenever this thing happens. Make a graceful exit for a while. Let the guitarist take over the show.
 
They'd probably try to recover from it as quick as possible. Maybe try to ignore it, some might try to make a joke out of it. I guess it would really depend on the celebrity. I've never really thought about it. I would probably just start laughing.

I don't particularly like any of those 'celebrities', but Opeth is famous in metal circles and I saw them in concert. I was up front and Mikael Åkerfeldt (the lead singer and guitarist) said he had a cold and made some remark about sneezing on the people up front. It was quite fabulos, and I wish he had in fact sneezed.

I bet they'd just carry on, because I think people would except it. ITs just a sneeze. They might be caught off guard perhaps, ones heart does stop when they sneeze.
 
i was at a concert and this happened:

the rapper just said 'hold up..remix' then just laughed it off with everyone lol ver very smooth
