If you are able to make an Audio CD or Audio DVD burn of the music (e.g. not making a data disc copy), then yes, the digital protection will be stripped from it.

However, some protected rights will not allow an application to burn audio copies of the data (possibly to DVD, os to both DVD and CD).

I have iTunes protected AAC music, but I can burn them to a CD and then re-rip the music back into iTunes without the protection in place.

Doing this will reduce the quality, depending on your selection.

You're mixing up copy protection with copyright.

Copy protection is a feature of iTunes, that prevents you from making copies of some songs in iTunes. But if you burn a CD from iTunes using copy protected songs, the songs on the CD won't be protected, so you could rip them back into iTunes on another computer and they won't be protected.

On the other hand, copyright isn't a physical property of a file or a book or a disc, it's a legal concept. It means that only the holder of the copyright (usually the song artist or publisher) has the legal right to make copies of the song.
