In short:
Is it possible, all data can be listened or viewed if it goes past their equipment

Think of it a little like a phone call, you dial, you talk but its not actually sound that travels down the lines its pulses of light down fiber optics and then translated back to audio at the other end.

Some one could tap into these wires at telephone exchanges (As breaking a fiber optic would render the connection useless) and could translate back these codes in audio again (As long as they know how)

Now you compare that to your scenario
Your using a programme, sends binary data back and forth, Ilegible but if you got the right programme you can translate that binary back into clear english.

Is it likely?
Chances are no,
Why?

Your bringing in your own equipment on premises.
They would need to know your MAC ID number / IP number to know which student it was or who it was unless it gives names out in the email / email address.

They could probably block your device from connecting to the internet and intercept with a firewall any innapropiate websites

Such as Pornography, as each website contains tags
Just simply right click and click View Source Code and you will see in this page

<meta name="keywords" content="yahoo answers, question, If I send emails on my iPhone using the school's wifi, can the administrator read my mail?, find the answer, uk">

So when you go on google or yahoo etc and type in "Can administrators read my mail?"

It will pick out the words Can, Administrators, Read, My, Mail from the metatag and show you this page in the search results in search engines (Google yahoo etc)

What if I am using the schools email domain?
Yes defenatly

If your using @myschool.com email account it will go through their servers and stored on there. The administrator will be able to see the email size, the content attatchments etc

And because it represents the school, they are legally entitled to view that content as your using school property and a service which directly represents your school.

If your using Yahoo, MSN, Etc then no
It has nothing directly related to your school, stored on the school servers etc so they wont be able to view that without a specialist programme to interviene.

These are normally protected with Checksum encryptions MD5 or MD4 via HTTPS connections to prevent interfearances.

HTTPS will listen to the connection for breaks which happens wether you like it or not when you tap into some ones line (it only last a fraction of a second but long enough to be detected)

read my mail? Ok so I recently used the school's wireless internet on my iPhone to send an email to my friends. Will the tech leader at my school or the server be able to scan through or read my messages? Thanks!

Any of your e-mails can be read by anyone who knows what their doing, and really wants the information.

By passing through the single point, yes, if the administrators really wanted to (i'm not sure the legal stipulations involved in monitoring the activity, unless you signed a waiver stating that you're aware that they can monitor all network traffic at their discretion) - they could.

Is it likely? Probably not. But is it possible, yes.
