I'm in soccer shape but I run out of stamina quick sometimes?

In soccer my position is left and right midfield. I have the pace, strength, and skill but my stamina can be just awful sometimes, some games its really high and sometimes its low and I don't know why that is. I am in shape and I do eat a granola bar or power bar every game and drink a Gatorade pouch when it's like 1 hour before the game. If its like 6 hours before a game I'll eat a full meal WITHOUT dairy. I do feel like I'm overworking myself sometimes, I feel like I would get too involved in the defense then when I'm not I'm caught too involved with the offense. I don't know what's wrong am I running too much, do I eat the right meals on game day, am I even playing my position right ? I would say I have a minor heart murmur but that is probably the dumbest excuse. But I don't understand how somedays my stamina is just over the roof then it's really low
