Is My Lease Horse Sickly?

My lease horse is a Thoroughbred gelding. You can see his ribs clearly, and his butt is thin and muscly, not round. He is very lean.
When groomed, he's very restless when you use a stiff brush or curry comb, but when you use his goat hair soft brush, he is really chill, so he has really sensitive skin.
He gets one flake of Alfalfa and one flake of Grass hay twice a day, which is twice as much as the regular feeding portion. He also gets three large scoops (metal scoopie thingy) of rice bran after a ride. He also has a bad habit of chewing wood in his stall.
He usually has long trail rides, but on Mondays, Tuesdays, Wednesdays, and Saturdays he gets 1 hour long Dressage workouts.
I would just like to know if there is anything I could do to make him happier or if he just has a weird metabolism problem. Thanks!
