Seems like I've heard that you cant/shouldn't freeze items with sour cream or cream cheese...thoughts on this? THanks.

You can freeze them but the texture will be changed. In this recipe with them mixed into the filling, I don't imagine it will make a big difference. The flavor doesn't change.
