How nice!! My favorite things to serve with salmon, no matter how it's prepared, are grilled or roasted asparagus dressed with butter and a bit of lemon, and corn on the cob with pepper or a really good fresh succotash: corn cut off-cob, simmered gently with Lima beans and a little cream, salt and pepper. Anything with citrus would be delicious: rice salad, a great parmesan/broth/wine risotto with a handful of fresh English peas thrown in at the end; stuffed baked artichokes (breadcrumbs, shrimp and parmesan, oil and garlic) are a beautiful start to a meal like this.
