Saute some bell peppers and onions in a pan with olive oil, throw in some tomato sauce and the mushrooms and simmer for a few minutes, add in some oregano/basil, salt and pepper, and you're done. Can't go wrong with a sauce like that. You can also add in other veggies that you might like....(zuchini, yellow squash, eggplant...etc) to make a thicker, heartier sauce.
