Once I convert to Judaism, will I have to leave my wife and find a Jewess?

My wife has not bore me any children yet. I love her, but she has no interest in becoming Jewish and it has been calling to me for some time. She said she would stay if I convert, but I don't know if it is allowed.

Judaism does not encourage converts you can still go to heaven and be a great person if you are not Jewish you just have to keep the seven laws of Noah
 
I think you are going the wrong way. You married your wife for better or worse, but now it seems to be worse you're going to ditch her. I'm sure devouit Jews will be impressed by your behaviour. Besides, the Old Testament is the Jewish Bible and it has over 600 commandments. It is the Book of the Law. Under Law the punishment for sin is usually isolation (jail or exile, etc.), and this happened when the Jews were taken into captivity in Babylon in 593 and 583 BC because of all their idolatry. This is why the sole aim of the Pentateuch (first five books) was to pagan-bash and to make the Jews monotheistic, so avoiding further punishment. That was in this life but in the next life the punishment for sin will be an eternity of isolation from the Lord, in other words Hell. So, as we are all sinners there is no possibility of going to Heaven under the Law.
Christians use their own Bible which is the New Testament. In it they are taught that, through Jesus Christ, they live under God’s grace, which means forgiveness for sins, and they do not work under Law so they don't need to adhere to the book of Law but to Christ's two Commandments: 1. Love God completely, and 2. Love your fellow man as yourself. As faith in Christ is a personal relationship with Him, behaviour becomes a matter for the conscience.
But as far as forgiveness is concerned, Christ said, in Matt 12.32 "And whosoever speaketh a word against the Son of man, it shall be forgiven him; but whosoever speaketh against the Holy Spirit, it shall not be forgiven him, neither in this world, neither in the world to come."
This is the unforgivable sin, and it means that there is no salvation and no place in Heaven for you unless you believe in the Holy Spirit (in other words, in the Holy Trinity).
Think of the Holy Spirit as being a key to the Gates of Heaven. When you finally arrive you can let yourself in and join God's family. Unbelievers won't have the key and so will be locked out. Whether it is extremely hot or cold and lonely out there won't make much difference. It will not be pleasant either way, but they be sorry they are not inside. Judaism does not believe in the Holy Trinity, so be ready to be part of the out crowd.
