Personal Fitness/Diet for Cutting weight in a healthy way?

I am a 26 year old male who is going to start cutting weight for a Grappling/Jiu-Jitsu tournament in 3 months. I am in pretty good shape already but in order to get into a the weight class I want I have to drop down some. My biggest questions are in regard to cutting weight. I would like to still maintain most of my strength bc I feel that it will be beneficial when I compete. I think I will need to change my lifts to higher reps to sustain a longer endurance. Currently I do sets of 3x10 reps in my normal workout session. What amount of reps/sets should I start doing to prepare my body for this type of competition. Also, how many calories, and what types of meals and how many meals should I start eating to start cutting down?

I currently weigh 160-163 normally.I'm 5'6'' with about 7-7.5% body fat.
I lift 3-4 days a week and my cardio consists of running around 3 days a week not including my Jiu-Jitsu class that I attend 3-4 days a week. I would appreciate any help that anyone could provide so that I am not dehydrated and am in as healthy state as possible prior to my weigh in and competition. PLEASE ONLY REPLY IF YOU KNOW WHAT YOUR TALKING ABOUT. I used to wrestle when I was very young and am not the more educated on this type personal fitness in shedding weight.
