Recipes for potatoes as a side dish?

I am fed up with boring old mash/roast/boiled potatoes to go with my dinners! I have experimented with potato gratin which my husband and I both enjoy, but can anyone recommend any other quick and easy potato recipes that are a bit different?
 
Dice the potatoes. In a bowl mix oil and dry onion soup mix. Pour over the potatoes (coat them completely) and pop into a 350 degree oven (176 C) for about 30 minutes, or until tender. Keep an eye on the so they don't burn. Makes a nice side dish.
 
Mash your potato and add a finely chopped onion and a finely chopped scotch bonnet pepper (careful as these are extremely hot) then shape into cakes and lightly fry until a light golden brown. Serve with salad and a dip.
 
colcanon mash - butter, milk, cabbage, salt, pepper and mash them together.

don't know what this one is called but its yummy my dutch friend made it for us - cook bacon lardons in a frying pan (No need for oil if you have a good non-stick pan) boil your potatoes, drain a jar of sour croute (Thinks thats how its spelled) add to the potatoes with milk, butter, salt and pepper add the bacon and mash it up! it really is delicious.

slice potaoes thinly, line a tin with them, add cream, chopped garlic, onions, another layer of poatoes then cheese and another layer of potatoes. season to taste (the yummiest douphonaise potato ever)

alternatively use sweet potato, butternut squash etc... instead of potatoes for a change
 
Twice baked potatoes. Bake potatoes (I use the microwave) cut them in half, scoop out the inside. Add whatever you want, sour cream, butter, milk, cheese, cream cheese, scallions, bacon, broccoli, etc. Mash them up, put the filling back into the potatoes and throw them into the oven to heat through.

I also like to thinly slice them and grill them on tin foil with butter or oil, salt, pepper and garlic powder. Really you can use any kind of spices on them, paprika, rosemary, etc..

Fried potatoes (or home fries) are always good too.
I also like to grate a whole, peeled potatoe, wrap the grated potato in a clean dish towel, squeeze out the water and fry it like hash browns.
 
Potato wedges are really good....I usually get a nice potato and leave the skins on. Chop them into wedges and par boil them for 5-19 minutes. Season with salt, pepper and some spices (I like mild chilli powder, turmeric and garlic.) Put your oven on a fairly high heat and cook until golden brown - crisp on the outside and fluffy in the middle.

Alternatively - cheesy mash is fab!! Boil your potatoes, mash them with butter, a little warm milk and nutmeg. Throw in some emmental cheese with some cheddar or whatever cheese you like! Place in an ovenproof dish and top with a little more cheese. Bake in the oven until the cheese on top is golden and bubbly. Calorific, but fab with nearly anything!
 
try jacket potatoes. or add cheese, mustard, or roast garlic to mashed potato. garlic and rosemary roast potatoes are good too. i really like this website http://www.lovepotatoes.co.uk/recipes/ for potato recipes, its really good
