I was parking near the curb at my house, and wasn't close enough. I backed up without holding the steering wheel, and notices that it started turning, in which I immediately straightened the wheel and continued on till I had enough space to attempt parking.

I just want to know if there is a problem or if its just normal.
I'm going up hill

If you happens to stop not completely straight then when you back up your car will move in the detection it is turned causing the wheel to move as well . So it is normal

There's probably nothing wrong with it.

A car's steering stability (understeer, neutral steer, or oversteer) is designed to work with the car going forward. A little weirdness when going backwards can be expected.

Next time you're in a supermarket, watch what the front wheels of your cart do when moving forward. Then, try backing up with it. It's not quite the same thing, but it illustrates the principle nicely.
