Update ruins sim-card-less iphone... what do i do?

i have an original iphone which i took the sim out in order to use it like an ipod...i was syncing it with computer and an update was installed. now it says i must have sim card and cant do anything. is there a way to remove the update or anything like that in order to get my ipod back.
