You can hike down into the Haleakala Crater, which is a great experience. On the road to Hana, there are areas to hike along the mountain side of the road. There is also the Hawaii Nature Center, which charges but offers a great hike through the rainforest and includes a number of ancient Hawaiian living sites (what's left of them). You can also hike for free further up the road near Iao Needle.
