What are some side dish ideas that aren't salads or carbs?

My husband and I are trying to cut carbs out of our evening meals and I'm running out of ideas to make our simple dishes a bit more substantial - particularly for him.

For example, tonight's dinner is lean lamb cutlets with a ceasar salad (low fat). I want to add something else but all I can think of is carbs.

The only side dishes that come to mind all have potato, rice or pasta! The only non-carb thing I can think of is garlic mushrooms.

Does anyone have any other ideas?

slice tomatoes, add low fat mozzarella cheese, fresh basil leaves and drizzle with olive oil. Eat as is or can be placed under broiler for few seconds to melt the cheese.

Use your grill and grill veggies such as eggplant slices, squashes, peppers, mushrooms, etc. brush lightly with olive oil. served with any meat it is great.

chopped tomatoes with equal amount of chopped celery (or cucumber) with low fat italian dressing and lots of fresh chopped parsley is great with a grilled steak, chicken or any meat.

In a skillet add diced peppers and sliced summer squash to ground beef and cook until beef is done and veggies soft, add a little worcestershire sauce. Really good.
