I'm making teriyaki grilled chicken tomorrow night for dinner, and I'm tired of the same old baked potato song and dance. My fiance is a picky eater, he won't eat: quinoa, any vegetable other than broccoli, risotto, or any kind of bean that isn't of the baked bean variety.
Any suggestions?

Fried rice would be good. Twice baked sweet potatoes would be good. Bake them, let them cool. Scoop out flesh and mash with butter and brown sugar and cinnamon and stuff them back into the skins and bake a little longer.

Wild rice.
Scalloped potatoes.

Or you could tell him to grow up, be an adult and try something new. Suggest:

Sauteed brussels sprouts with romano cheese and garlic
Grilled marinated asparagus
Roasted red peppers
Stir fried green beans with ginger

The possibilities are endless.

Broccoli is extremely healthy!!! Be glad he likes it.

How about sliced tomatoes on a lettuce leaf...looks pretty and taste good too.

The most important vegetables are:
Broccoli;
Cauliflower;
Cabbage (can be cooked or made into coleslaw);
Brussel Sprouts.

Orange (some people consider them yellow) vegetables are extremely healthy:
Cantaloupe;
Watermelon;
Sweet Potatoes;
Tomatoes;
Acorn squash;
etc.

Some people do not like veggies because they have not been seasoned correctly.

A cheese sauce can make veggies delicious.

Had it last night with fried rice and Chinese style broccoli.
