Humor - wit: a message whose ingenuity or verbal skill or incongruity has the power to evoke laughter
Satire - sarcasm: witty language used to convey insults or scorn;
Some good things to say would be that both evoke laughter, and both can be insulting, but satire is usually insulting something while humor doesn't necessarily have too.
The way I would do it is find 4-5 books/excerpts/short stories/ poems about half with a lot of satire, half with a lot of humor and compare and contrast the way they use humor/satire to convey their individuals messages and how the reader interprets these messages. Good luck!
