Tropical Apple Date Bread
3 cups all-purpose flour, sifted
1 cup sugar
1 tablespoon baking powder
1 1/2 teaspoons salt
1 cup flaked coconut, toasted*
1 1/2 cups milk
1 egg, beaten
1 teaspoon vanilla
8 ounces chopped dates
1 cup finely chopped apples
Preparation:
*Toast coconut:
Spread coconut in shallow pan. Bake at 350° for about 15 minutes, stirring frequently, until lightly browned.
Mix and sift flour, sugar, baking powder, and salt.
Stir in the toasted coconut coconut.
Whisk together the milk, egg, and vanilla; add to dry ingredients.
Stir well.
Fold chopped dates and apples into mixture.
Spread into greased and floured 9x5x3-inch loaf pan.
Bake at 350° for about 1 hour and 15 minutes.
