Whats the best gym routine style?

So ive seen some gym routines which focus on one part of the body per session and really work the part, like Monday: Chest, Tuesday: Legs etc Ive also seen routines which do a general workout of the body every other day. Now what I dont get is this, with the first workout your only doing particular excersices once a week. where as in the 2nd its multiple times a week.

What are the advantages and disadvantages of each method?
