What's the difference between cooking meat with brown sugar and cooking meat with

honey? Hi, I saw this spicy pork recipe with 2 different types of ingredients: 1 uses brown sugar and 1 uses honey. What's the difference between tastes if I use honey instead of sugar for the pork? The pork will be pan fried. Which would taste better?

Brown sugar has a deep molasses flavour, and this becomes an even deeper taste when its caremalised in the pan.

Honey is altogether different, its a lighter taste and goes well with other flavours without being overpowering.

I think Id go for honey
 
When I was in cooking school when we made different rubs and stuff for pork we always used brown sugar. The brown sugar didn't over power it and it when it baked, grilled, or pan fried the color of the meat always turned out to perfection. Brown sugar always does the trick but it's really based on your taste. And when cooking with honey on meat it can always get messy because you would need to put the honey in a separate bowl first and add the seasoning so that you get even flavoring.
