Why are some basic submissions never used in MMA?

There are a bunch of submissions from basic Jiujitsu that I have never seen attempted in MMA. Some are the Jericho choke, an Achilles lock, the figure-four toe hold, a north-south choke, or a hammerlock.
Even a basic half-nelson works miracles. A strong half-nelson cuts air and blood to the head in about 5 seconds, and it is even more painful to the neck. Anybody who has wrestled knows that surviving a tight half-nelson is near impossible to do, and it requires very little energy to hold.
