Why do my Gluten free biscuits always fail?

Hi,
Have just finished with my third ruined batch of gluten free anzac bikkies. The first time, I forgot sugar, so they didn't brown nor tasted any good. The second time, I flattened them out too much and they were like pancakes...and the third time, I made sure to include sugar, and to keep them as balls. Opened the oven, and dismayed to find anzac pancakes instead of golden biscuits.

I don't get it. I can make normal anzac bikkies just fine, what am I doing wrong with the gluten free ones?
