I have two madeleine pans. one is non-stick and the other is traditional.
how come when i put both in the oven, the cookies from the non-stick pan are burnt more?
yeah, the nonstick pan is darker.
thank you:]

Is the non-stick pan a darker color? Cookies bake faster on darker-colored cookie sheets because these absorb/reflect more heat.

Becauset he non stick pan is darker. Pale and shiny finishes lack the superior heat absorption of darker finishes, resulting in spotty browning. Dark-colored surfaces absorb heat in the oven; bright surfaces do, too, but they also reflect it

Either reduce your baking time or the temperature when using the non stick pan.
