Why is this girl all of a sudden losing interest in me?

She's telling you that she isn't interested in you as more than a friend. You should keep her in your life as a friend if that's what you want. Sorry. There is another girl out there who will be interested.

This one girl and I who I am dating really was hitting on me and was even calling me cute and it was her idea to ask if she wanted to meet me at Starbucks tonight and she seemed interested in hanging with me constantly so I even told her I can’t tonight but I told her I def want to hang tomorrow.

So we met and we seemed to get along great in person but ever since we met, she hasn’t been texting me or calling me at all!! The only thing she said was: “I had a great time but I think we should just be friends. However, I DO WANT to HANG AGAIN. You seem fun to hang with. Will you like to hang maybe just as friends?”

She said that and I told her: “Of course.” But I can tell the physical attraction is disappearing!! She only wants me as a friend but she isn’t even initiating or making plans or talking to me like she used to. Whats wrong here with this picture?! How can I win her back and work my way up to a relationship with her? How much time should I give her to initiate with me? Should I still keep her in my life?

Maybe she can't see herself being in a relationship with you... If you want to try winning her back, exert an effort by calling or texting her since it seems like she was the first one to make the move... Make your move now... You won't know she's worth keeping in your life unless you try first...

well i am a girl and i'm not sure if i am right but i have acted like her myself.
The reason i did this was the guy was very nice, we had a lot in common but he was too eager.
he texted me saying whats happening too much and it wasn't exciting. his looks were even pretty good.
i need to be excited, or have a bit of tension.

a bit of mind game keeps things frustratingly fun.

I would say take it off. Respect her wishes and try to just be really casual and chilled around her. catch up again and show her a different side of you, and be friends.

if it just isn't there it isn't

Well, that's simple; there just wasn't any chemistry there. No spark.
Sometimes you have an interest in someone that you have only spoken to and never met. You have to meet them to figure out whether or not you are physically attracted to them, or whether or not there is chemistry.
So she thought that she might be interested in you romantically, but when she finally met you, she didn;t feel any kind of attraction to you.
Sorry, but it happens sometimes.
You should probably move on.
You aren't going to get anywhere with this girl outside of just friendship.
