a good starting bike?

im looking to get a sportbike. nothing like a cruiser more like a crotchrocket. i have plenty of experience on dirtbikes and quads and am aware that the difference is night and day but im pretty sure growing up on dirtbikes helps out. i want to know what a good bike would be. i want a nice fast bike that handles great. im about 240 and around 5'10. i like any of the 600's which one is the best overall?
 
All the Japanese companies make hot sportbikes in 600cc and 1000cc sizes, because those are standard racing categories. This is a very big 'market segment' so all the companies compete strongly, upgrading their entry every year or two to add another 5 hp and shave off another 10 lbs. They are all great bikes, masterpieces of engineering. But they are serious single-purpose machines, not good all-around motorcycles. And they're not easy to ride. I wouldn't recommend one as your first street bike.

There are some very sporty 'standards' that are better for all-around riding. Like a Suzuki SV 650 or a Honda 599 or Kawasaki Ninja 500 or 650. They are plenty fast and good-handling, plus they're just easier to learn on. A modern standard is the equivalent of a hot sportbike of 10 years ago.

Buy a good used one, ride it for six months or a year to learn street riding. Then you can sell it for about what you paid for it, and by then you'll have a better idea of what you really want. Then if you still want that GSX-R or R6, at least you'll be better able to handle it.
