...the music at home? I know it is not legal to use copyrighted music in video slide shows if I am making them for a client for profit. My question is, would it be legal for me to offer a service where I cut/edit the video together (presumably timed to the music they would have selected), but the final product they pay me for is a version with no audio at all, giving them the option to add the soundtrack in at home?

It seems like it would work, but I don't want to get caught in some weird copyright law that I don't understand!
 
Assuming either you or the client owns the rights to the slides, there is no law regulating the TIMING of the slides. Adding copyrighted audio would be a violation even if no profit is involved. That said, in your scenario, YOU would only be in violation if you facilitated adding the copyrighted audio to the slide-show. Explaining to the client HOW to add the audio may be enough to get you in trouble.
