hello. I learned the recipe when I was younger. This is a South Louisiana recipe, but very simple chicken, sausage gumbo. This is what you do:
You need a pack of boneless, skinless chicken (either white or dark meat or both) your choice
you need one onion, a little bit of bell pepper, one pack of polska kiabosa sausage (sold at walmart) or any sausage you like.
You need rue mix (Mrs. Vickies Rue mix sold at walmart) if you don't have it, don't worry about it.
this is what you do
brown your chicken, season well
add in your onions cook on low heat stirring so that they don't stick to bottom of pan
add in bell pepper and cut up sausage. add seasoning to taste. If you have that rue mix, add it, if not, don't worry about it. You can add either chicken stock or chicken buyon cubes which are the same thing. add two cups of water. put on medium heat until boiling, once boiling lower and stir occasionally.
On the side, you can cook rice to serve with the gumbo. It's sounds difficult, but it's incredibly simple and fast. When you chicken is cooked, which it should be before you add everything else in, all you are really doing is heating everything else up. The sausage is already smoked so all you are doing is heating it up. Good luck!!
