...gross sales per year, and...? would you be happy with that amount as a "commission" instead of tips?
Yes, of course, the price of the meals would have to be adjust upward to take this into account. Perhaps a percent or so more for added book keeping, but I'm just asking about a different system, not discussing all the hows and whys of it.
So, what percentage of gross sales would compensate you for the tips you now get?
