How to upgrade ios to an older version?

Okay so i have a fourth generation iPod Touch, which has ios 4.3.5. Its Jailbroken, so if i get the newest version of ios i won't be able to re-jailbreak it. But i've run into complications that make it impossible to get some apps. So can i upgrade, just not to the newest version of ios? (e.g. 5.0?)
