I have yet to see a product manual that doesn't cover this in detail. But, in short, you need to run your cable box audio to the surround sound system. This can be done with either optical cable or digital coax cable (for 5.1 surround) or red/white RCA cables for just two channel audio. The cables you use depend on the audio out port on the cable box and the audio in port on your surround sound system. You then need to send the video from both the cable box and the surround sound system to the TV. Ideally this should be done via HDMI cables, although component video cables will work just fine with your cable box since most HD cable is in 720p or 1080i. You will then select the appropriate source/input when viewing your cable or Blu-ray movies.
