I need some good stew and soup recipes that are low carb. What should I cook?

All you need are your regular soup and stew recipes that you make some minor tweaks to.

For instance, for your stew, replace the potatoes with turnips. Add things towards the end like broccoli and cauliflower. Thicken with a very tiny amount of psyllium powder in place of the flour or cornstarch as a thickener.

For the soup, you can use chicken, chicken broth (I make my own so the fat level is very low as is the salt level), bok choy, green beans, a little carrot but not much, onions, and again add the broccoli towards the end so it's not too soft. You can thicken it by putting some of the veggies through the blender and use that as a thickener if you wish. If I want to make it a cream soup, I make it as I said above and once I've put it into bowls, I've added 1 tablespoon of heavy cream and stirred it in.

For the casserole, Dreamfields makes a low carb noodle that only has 5 grams of net carbs and it tastes just like normal noodles. They sell elbow macaroni, spaghetti noodles, noodles like mostacholli noodles and lasagna noodles. With those noodles you can make tuna noodle casserole, macaroni salad, etc. And that's 5 grams of net carbs across 3/4 cup of uncooked noodles.
