Out of all the religions why did Judaism and Christian survive to modern times?

Uhm, maybe because the "extinct" religions actually professed that the Gods had physical interactions with the world that obviously weren't happening, which is the reason that the other religions immediately dropped those claims and made other "nebulous" claims that are impossible to verify, but, with word play, easy to "redirect" doubt.

For a long time Christianity was the most powerful religion in Europe, and very intolerant of others. People of other religions were often persecuted into conversion.

My guess is that people prefer a single ultra powerful god instead of many. It is a form of evolution where the best meme survives. However, judaism and christianity has evolved as well, such as the introduction of the devil and hell into christianity.

Example:
People use to believe hell is underground and heaven above the clouds. Now, no one believes that.
People now believe their god is outside this universe and outside time.
Since evolution theory has been well established, most christians now believe the genesis story to be a allegory.

Religion evolves.

Over time, as we've come to understand more and more of the world around us, the number of gods that we believe in has diminished. So in the ancient world the majority would have poly-theists, while the current majority are mono-theists. You can probably see where this is going...

Because the Christians slaughtered the ones they could get at in their early years.

Islamic nations were tough enough to persist, Hinduism and Buddhism was out of their reach. Notice there was never a crusade to India or China?
