Please Help! Palo or Remy on the Disney Cruise - and what about the kids?...

...Help Please!? HELP!
May 30th 2011 is my Birthday and we will be on the Disney Dream Cruise ship.
I need help deciding between Palo and Remy. Has anyone done either restaurant.
I know Remy is a 3 hour dining experience and I really want to try it, but one thing I am worried about, the kids... ages 6, 8 and 11. They will all be in their kids club while we are out, but what do they do for dinner?
Do we just go to eat after we are done at Remy? We have the 2nd dining option on the cruise (which we requested) so our time to eat is at 8:30PM. Which is no biggy for us, we always eat late at home.
So, I am just wondering, what do we do for the kids if our dinner does not start until 6:30PM and we are there until 9:30PM? I just want to make sure they will be okay food wise - I know they will be fine in the Oceaneers Club, I even want to go play in there! lol - However, Do we eat before hand with them or after Remy?
I am really leaning towards Remy rather than Palo. I want to try new things and we will be eating at Via Nopoli at the Epcot a few days before, so the Italian side of things, we have covered. :) lol -
I also don't want to miss any of the fun dining restaurants, what if Remy is at the same time we are suppose to be at Animators Palate? or the Enchanted Garden? - can we still make it at 9PM? Or will they let us go a different day or time? Also, I don't know if this matters but we are booked on the 5 night to the Bahamas. :)
If anyone can help me out here, I would really appreciate it.
