Poll: What is the most complicated food dish you can make with only raw ingredients?

By raw I mean absolutely unprocessed - fruits and vegetables are fresh and unpeeled, meats aren't in neat styrofoam trays (but you can use beef if you're trained in killing and butchering cows). Cooking equipment however is anything goes. What's the best you can do?
 
Name it.....I'm a head chef.

How about Monkfish tail which I'll scale, gut and fillet myself, on a bed of roasted butternut squash with sage and caremalized garlic, and a sauce made from fish stock which I'll make from scratch, thickened naturally with some potato (as cream is processed) and with a few fresh clams scattered around the plate.
