Tomorrow my family is taking a trip to an amusement park. We are packing food and keeping it in the cooler. I have a gazillion cucumbers from our garden, and besides just cutting them up, I would like to bring another "cooler friendly" cucumber dish. I couldn't really find anything looking through my cookbooks. Does anyone have any suggestions/recipes for a great side dish made with cucumbers?
