Just curious... Ideas please. We just made a batch of southern fried catfish but eating it by itself seems kind of oily.

If it is oily, you likely cooked it on heat too low. And most people have fries, hush puppies, onions some slaw. I've seen people eat turnip greens and pinto beans with fish.If you want something with less oil, try potato salad.

Collard greens, Beet greens, Mustard greens! Greens, greens, greens! just cook em up with a little bacon onion, simmer in some chicken broth salt and pepper to taste - good! Or you could always eat corn.

Mashed sweet potatoes and sauteed collard greens. If you don't feel like cooking, go to your local delli and pick up some potato salad and cole slaw or make a nice green salad with a vinegar & oil dressing to cut the fat in the fish.

When reheating the catfish, preheat ovento 375 degrees, then line a baking/cookie sheet with brown paper, place fish on brown paper and heat until hot and crisp. You can cut up brown paper bags and use the inside of the bag, remove the glued part. Brown paper absorbs more oil than paper towels and can be used in the oven. Serve the fish with malt vinegar and tartar sauce, homemade or store bought is fine. The vinegar is more British than southern but cuts the oil/fat that the fish has absorbed.

I like to pare fried catfish with mashed potatoes, green beans, potato salad, or coleslaw.

I'm getting hungry just thinking about it!
