Eggplant Parmigiana!

You need: Eggplants, bread crumbs ("four cheese" flavored bread crumbs are awesome), red pasta sauce, a couple eggs, and cheese (preferably mozzarella and Parmesan).

Just buy a couple eggplants (one would suffice for two or three people), wash peel off the skin with a knife or peeler, and then slice the eggplants into 1/2 inch slices. Some people sprinkle the eggplant slices with salt and then let them sit before rinsing and drying the slices. I have tasted no difference when doing this; it's too much work for me. :P

Preheat the oven to 350 degrees.

Then coat the slices in beaten egg, then bread crumbs. Put them on a baking sheet and bake them for about 5 minutes on each side to make sure they're tender. Then, in a casserole dish, layer the slices with the red pasta sauce and cheese. So, a little sauce at the bottom of the dish, then a layer of eggplant, then some more sauce, then cheese, then eggplant, so on. Finish with the sauce and cheese at the top.

Bake that in the oven for about 35 minutes, or until the cheese is just starting to brown.
