Look , I am not going to even pretend that I am in the know here , just some pointers that I have found in the one video I have ever done for some bloke on his wedding day at bunkers bay on a pretty piss poor day of surfing. ( http://www.youtube.com/watch?v=8pKNREvpyic ) if I were in the know , I would suggest filters , the filters that come from red giant software for your editing program called movie looks , this will give you the base line of the video original , and the transition of the top of the frame giving you a change in the dynamics of the video colour effectively changing the look of the ocean.
your video is awesome , some awesome pictures there , however as you have indicated the colours are stock standard , you can try and change the settings on your camera to vivid , but I don't think that any camera will get this to the dynamics you are looking for , I know you have a good camera , as I know that the zoom has to be a pretty Strong either fluorite and long distance with help or stock standard, but pretty strong.
what you are looking for in camera wont ber something which you have or can probably find without doing it in the production room , changing the contrast a bit , and putting a movie looks filter on , and probably changing the colours to studio in your cs4 or vegas ..
editing is where you will get the colours you seek mate
