What fighting style do you feel is under-utilized in MMA and why?

I would say Judo is under utilized the most. Not many fighters are skilled enough in it to use it properly. But when utilized it has been very effective.
 
Kung Fu.

I think most MMA people come from Martial Sports backgrounds like Boxing, Sambo, Wrestling, Muay Thai, etc. They are people who want to use their combat skills for sport, or to make money. So naturally, they gravitate towards MMA. BJJ is similar, because early MMA people used it (Gracies), and people saw it's effectiveness.

Now traditional martial arts on the other side, like Kung Fu, usually attract more of the people who are looking for self-defense, exercise, and self control. They do not focus as much on the sports mindset, therefore people into these are not likely to do MMA. And it is also because some skills take longer to master than others. If boxing, wrestling, and such took so long to master, then you would see 50 y/o's winning, not 20-30 y/o's.
