Whats a good dish to make that needs lots of potatoes?

Its a cold, rainy day outside (this is rare in LA)
I'm warm and cozy in my house and for some reason craving something that has lots of potatoes in it.

I googled stuff but then I realized I prefer personal opinions from you guys.

What kind of things can I make that need lots of potatoes???

I thought tuna potato casserole but I don't have any tuna. :(
 
Potato Soup

Bake however many paotatoes you want...let cool a minute and cube (or you can boil cubed potatoes)
Brown up some cubed ham and/or bacon in a pot, add minced garlic and use the fat to sweat some onions and celery. Add a little butter and flour and create a roux.
Add seasonings (basil, thyme, parsley...)
Slowly add liquid...half water, half milk
add potatoes
Let thicken

Sometimes we add in some broccoli and melt in some velveeta cheese.
 
Potato pancakes.
Make them from grated potatoes, not leftover mashed potatoes.
Add a finely minced or grated onion as well.
Unfortunately this is a meal that the cook does not get to eat until everyone else is done. They just are better if they are eaten as they come out of the fry pan.
Serve with sour cream, apple sauce or my husband likes ketchup with them.
And it is not officially a potato pancake until you have grated a knuckle into the potatoes.

there are many many escalloped potato or au gratin potato recipes out there and they take a fair amount of potatoes. You can make them with meat or without if you happen to be a vegetarian.
Also a creamy rich potato soup with crisp bacon and lots of celery and onions...
Darn it, now I am hungry for potato something...
 
Oh wow, that's easy.....BACON SCALLOPED POTATOES!! Oh ya, think I'm going to be making me some right about now....hoo wa!! Thanks for the inspiration!!
