Why are itunes digital copies so much smaller than the same movie on dvd?

I know the basics, so I would like specifics. How effective is the transfer to MP4 format at creating a smaller file? Also I'd like to know the differences from the dvd to the digital copy for frame rates, video resolution, Kbps quality.
I already have a converter. (see question above)
