Would a touring bike be suitable for what I need?

I like to go both on road and off road on my bike, but am trying to decide what type of bike to get. I am travelling from Lands End to John O'groats as well as travelling abroad for cycling trips. However, I usually carry a few things with me, not a lot but enough to make a touring bike a useful consideration. Purely because they have the extra space and racks. But can they handle off road, not very rough but a bumpy dirty track say? I have a road racing bike that I was given, and also want an off road/mountain bike for home. But when travelling thought a touring would be better suited.

Touring road bikes are not really designed to go off-road. For VERY light trails you may be able to go with cycle-cross tires or something else with a more aggressive tread design.
 
Any of the touring bikes will work. Some have the regular shifters like a road bike and some have the shifters on the bar ends. You need to decide what kind you like. Visit the local bike shops.
