I have seen on R&S time and time again Christians using fulfilled prophecies from the Bible as evidence of its validity. What prophecies are these? Can you provide examples?

Three things usually happen:
The prophesy is vague.
The prophesy is misinterpreted into a different language.
The prophesy is written after-the-fact and claimed to have been written a long time prior.
All of the Jesus prophesies fit into one or more of these. The Jesus story is a myth.
