Does blu-ray make a difference to movies previously released on DVD only?

I'm considering buying "The Host" and "Edward Scissorhands" on blu-ray, both of which were released before blu-ray came out.

Since these were originally shot in Standard Definition, would watching them in High Definition make a difference? Or should I just buy these on DVD?
 
Yes, and maybe. Some of the best HD footage comes from old films b/c the original film has much higher resolution than a standard 480-line DVD, and new film scanners really bring out an amazing amount of details. Watching the old NASA tapes on Blu-Ray is proof of this (from Why We Left Earth). The "Maybe" comes from the fact that there were movies shot at 480-line resolution. I'd still wager a guess that they will look better on Blu-Ray too though.
