Question about Blu-Ray DvD's, HDMI, DLP and LCD TV's?

This may sound strange or it could be just a figment of my husband and I’s imagination however we kinda want to know. So here’s the story!
My husband and I had a DLP TV and we watched our Blu-Ray DvD’s on our PS3 however the PS3 was hooked up with component cables. This worked fine but husband and I decided to upgrade. We replaced our 50” DLP with a 65” LCD and hooked all our systems with HDMI cables! Needless to say the picture looked 100 times better however when we went to watch Transformers 2, the movie switched between full screen and wide screen and their seemed to be parts that we had never seen before. After the movie was over we double checked to see if we played maybe an unedited version but we could only find one version. So basically my question is, do Blu-Ray DvD’s have different play modes for TVs and systems that can handle those modes? Oh are we just so intrigued in the new picture and the amazing upgrade that we just missed a bunch of stuff the first time we watched the movie?
I believe it has special content for the HD setting however it doesnt explain why some parts of the movie would be in full screen while most of the movie is in wide screen. It also seemed that the parts of the movie that were mostly CG were the parts that changed into full screen... It was quite weird.
and the DVD was bought at Wal-Mart! :) Good to know about the IMAX! Thanks
