Why does car audio sound so terrible?

I'm looking to upgrade my car audio system, and I am disappoint in everything I've heard. I have a sweet pair of headphones (Grado SR80i), and they are airy, transparent, and detailed at all frequencies (they are pretty much flat). I can listen to them for hours without getting tired.

I want to get the same sort of sound from a car system, but everything I've listened to is NOT flat, transparent, or airy sounding. Sometimes the highs are piercing, the mids are muddled, and forget about the bass/subs (a mush of low frequency, even in a sealed enclosure). Way too much punch on some frequencies, and that leaves the detail smeared.

Is there a way I can achieve this without going over $1000? (I spent around $100 for my headphones which blow everything out of the water without a headphone amp!)
